What bean to bar really means

Bean to bar means we make chocolate from the whole cacao bean, not from pre-made industrial chocolate. We carefully oversee every stage of the journey – from sourcing exceptional cacao directly from trusted growers to roasting, refining, conching, tempering, and moulding each bar ourselves. It's a slower, more hands-on process, but it's the only way to bring out the true character and flavour of the cacao. The result is chocolate that's honest, distinctive, and made with care from bean to bar.

We know where every bean comes from

We work directly with small-scale farmers in Oyo State, Nigeria, Madagascar, and Ecuador. No commodity markets, no anonymous supply chains. We visit the farms, we know the farmers, and we pay above Fairtrade rates — because the quality of the bean determines everything that follows.

Cacao beans are roasted at carefully controlled temperatures to develop flavour without burning away the delicate notes that make each origin unique. Our roast profiles are developed over months of tasting — adjusted for each harvest, each bean variety.

Hours in the melanger

After roasting, beans are cracked and winnowed to remove the husk, leaving pure cacao nibs. These go into our stone melangers — heavy granite wheels that grind and refine the chocolate for up to 72 hours. This is where texture becomes silk and flavour becomes complex.

The science of the perfect snap

Tempering is the process of heating and cooling chocolate to align its cocoa butter crystals into a stable form. Done correctly, it gives the bar its gloss, its clean snap, and its smooth melt.

Carefully tempered. Crafted with precision. No shortcuts.

No emulsifiers. No palm oil. Nothing hidden.

Our ingredients list is short by design. Cacao, cane sugar, and for the milk bar — whole milk powder. That is all. We believe you should be able to pronounce everything in your chocolate.
